Low carb toast recipe with avocado, serrano ham and poached eggs

Ingredients:

4 slices of SOLA SWEET box bread of your choice
1 large avocado
4 slices of Serrano ham
2 ounces fresh mozzarella cheese
4 eggs
3 cups of water
2 tablespoons of white wine vinegar
Sea salt and ground black pepper

preparation:

  1. Let's start by preparing the poached eggs, bring the water to a simmer and add the vinegar, gently break the eggs into the water and cook for about 4 minutes, until the whites are firm but the yolks remain runny.
  2. Toast the bread and cover with sliced avocado, season with sea salt and black pepper to your liking, cover with slices of ham and mozzarella.
  3. Lastly, add the poached eggs.

Ready to enjoy!

💡 TIP: You can decorate the toasted bread with radishes or chopped parsley, both will add an even better flavor.
